Hi Royce & all....

   Oooooh, nice potato soup recipes, everyone! One suggestion
I'd add, though, is to substitute fresh carrots for the cooked
ones. Coarsely grate a couple of carrots, then sprinkle them
over the soup just as you serve it. That avoids "crock-pot
syndrome," of having the carrots dominate the flavor, and the
fresh tang of raw carrots is a really nice contrast to the deep,
warm flavor of the soup.

   As to milk substitutes, you can get by without adding milk at
all; many potato soup recipes don't even call for it. Instead,
just cook it a little longer and stir it a little more, to break
up the potato chunks a bit finer. You can also remove a couple
of scoops, mash them, then add them back in. There is naturally
enough starch in potatoes to thicken the soup nicely, if what
you want is a more porridge-textured result.
