Pete Granzeau checked his dictionary for some of the words:

But I imagine the usage in Morris referred to that "neat" which
is (in effect) the singular of "kine".*
Still used in the compound "neatsfoot oil", a leather preservative,
but otherwise obsolete in American English.
[*] Ask a neat if it has Buddha nature and it responds "Mu".
