They're not farmed  (except chicken and rabbit)?
Diferent cooking methods or requirements- so they were commonly eaten, (either officially or unofficially) by the poor as well as the rich? (You could cook them on a smallish fire - no oven required.)

Leading on from that, you could cook them all whole, so you didn't need a word for the meat, because you could tell from the shape, whereas if it was in a pie or a stew, you did - but that is building an etymological edifice on foundations of sand.
