"The maid of the north: feminist folk tales from around the world." by Ethel
Johnston Phelps. The seven hunstmen story is of German origin.

I have a second similar collection which is "Fearless Girls" by Kathleen
Ragan. My favourite story from that one is Haitan and is called "I'm
Tipingee, She's Tipingee, We're Tipingee, Too."  where the social
organisation and friendship of the girls in the village outwit the
step-mother who is trying to sell Tipingee into slavery to pay a debt.
