Thanks for all the suggestions about the macaroni & cheese. I collected them and wrote up a little 1-page document.

Meanwhile, I redeemed the original casserole by mixing in a commercial cheese sauce dip containing green chile and labeled Medium (hotness) and dumped a load of grated cheese on top. Memo:  the little pastas still poked through. Either there should be a carload of grated cheese, or use something thicker-cut than grated. Anyway, thanks again!
