OK- after you've cooked your macaroni (and if you use whole wheat macaroni extend the time-to-finish by half again what the recipe says. Likewise if you're at 5,000 feet. If both, allow half an hour cooking time.  Yes, even in a pasta pot. But check regularly, YMMV.) -

Then make white sauce in microwave. In a 4-cup glass measure mix 3T butter, 3T flour1/4 tsp salt, a dash of pepper. Melt on 70% power -as if my little fella Dinky could generate any more!. Then SLOWLY stir in 1 cup milk. WHOLE milk which is already at room temperature. Skim milk does NOT work. And if you have an older recipe book they will not specify Whole Milk because that's what everyone used for everything but the most specialized applications.

Microwave on full power a minute and a half - probably 3 minutes in Dinky. , stir well, repeat. Should be thick.  Add a cup or more (my recipe said 1.25 cups) grated cheese - sharp cheese! Though I did very well once with the remains of a party tray of diced cheese. They say if you do that, add some diced onion at the beginning. Anyway, microwave on 70% power if you have to melt it more. Now, what I did was add green chile. Chile con queso is like Romeo & Juliet, or green eggs and ham.

Grease or speay your casserole. I use a 1-quart round casserole which is excellent.
Now layer the macaroni and sauce and top with a heaping topful of grated cheese. (Or mix it all in together with a layer of grated cheese.

Bake at 350 degres for 40 minutes.
