Good questions.  I have asked myself those self-same questions, and many 
others.  I could have easily been the one to write the original post 
asking, What's all this about vampires? but then I read McKinley's 
_Sunshine_ and realized that a well-told tale about a vampire is still a 
well-told tale.

I seem to recall that someone once disproved vampires by the expedient 
of calculating the actual amount of blood necessary.  And it was a *lot* 
  Three or four people a day, if I recall correctly.  And even then, 
they would be undernourished, and suffer from all kinds of deficiencies. 
  There is apparently not enough fat in blood.

I suspect that vampires are magical creatures.  If, as in the Niven 
stories, the magic were to go away, *poof* would go the vampires.  To 
dust they would turn.  And then they would be but legends.
