There are literally millions of programs that will create MP3s, now. 
(Well, maybe not *literally*.)  iTunes will do it, provided you tell it 
to.  You do <Edit>, <Preferences>, click the <Advanced> tab, pick the 
<Importing> tab, and under the <Import Using> pick list, pick <MP3 
Encoder>.  Then toss the CD in the drive and import, to some directory 
you know how to find.  Then, turn around and follow the above 
instructions for creating/burning the MP3 disc.

This is for going from audio to MP3.  Going from Audible to MP3 is 
harder. Likewise, from AAC or WMF/WMA (Windows Media Audio).  There are 
a few free ones that work okay.  Interestingly, if you can convert from 
a format to a .wav file, you can easily get back to MP3.  Nero can do a 
lot of these things.  Nero is expensive, though.
