That's because the acutes aren't 7-bit ascii. They are 8-bit
characters, and the values assigned to each 8-bit character
ar not standardized across applications. If you're lucky enough
to have a email reader or web-browser that shares the same
"definition" of the character you sent, then it will look like
the same thing.

For example, I actually do see an e accute for é. Usually,
I would see a small rectangle, an i-accute or i-with-funny-hat,
random greek letters, etc.
