You MUST watch:
Crest of the Stars/Banner of the Stars (Bujold-level
SF space opera.)
hack//.SIGN (WoW met TRON and they got along VERY well
indeed... meet the kid.)
Princess Tutu (The anti-fairytale.)
Elfen Lied (WARNING: SF horror.)
Darker Than Black (SF horror; Not quite so gory as
Elfen Lied, but I think it's much more disturbing
emotionally.)
Macross, Macross Plus, Macross Seven, Macross Zero,
Macross Frontier (any one or all of them, I personally
recommend Zero or Frontier)

I think that's a good start.
