Vat meat in the nexus seems to originate, at however many removes, in an animal. In ACC’s the “Food of the Gods” was either assembled or the original vat starter was.
It is interesting that from something that was either an expensive affectation or an expensive necessity in places where raising animals was impossible (space stations or Beta Colony, remember the newts were there to control the plants in the air system) to now competing with farm raised animals.
