Saddle stitching suffers from page creep which limits the number of pages due to thickness. Page creep is the need to shift the printed portion of the page closer to the outside margin as you move away from the center of the magazine, so the content that is closest to the spine on a particular page is not obscured. 

Saddle stitching also requires the number of pages to be divisible by 4 whereas perfect bind does not.

Also by not using staples, the printing process is considered to be more eco-friendly.
