Watering seedlings is fine - they'll die without water - but there is an
infectious disease called "damping off", associated with very moist soil,
that causes seedlings to rot at the soil line.

Just keep trying and you'll do fine.  Try simple things.  Planting garlic
cloves is remarkably easy, although you may find it helpful to soak them in
a paste made of baking soda and water in order to ward off fungal
diseases.  But I've had few problems, even with stuff from the supermarket.
